Tater tot chicken casserole is the kid-friendly dinner you’ve been dreaming of. If you want to pile some protein and veggies onto your picky eater’s plate that they’ll actually eat, you’ve found just the right recipe! Tater tot chicken casserole features a creamy mix of veggies, chicken and cheese all baked to perfection beneath tater tots and even more cheese. This is one of my favorite fun weeknight dinners to make because it’s easy and I know my kids will devour it. I don’t think I’ve ever had leftovers of this tried and true casserole recipe!
What’s in chicken tater tot casserole?
Frozen tater tots and frozen veggies have never been so delicious! Here are just three key ingredients that make this fun casserole so good:
Tater Tots: Any bag of frozen tots work well! To be honest, I don’t think I’ve ever met a frozen tater tot I haven’t liked. Mixed Veggies: Any mixed veggies will get the job done, so use your favorite (or whatever is already in your freezer). Chicken: In a bit of a hurry? You can definitely use pre-cooked or leftover chicken. If you decide to go this route, you can skip the second step and just add the chicken in your mixture in step 3.
How to Store and Reheat
Like I said, I almost never have any leftovers of this chicken tater tot casserole! If you end up with some, no worries – it reheats like a dream. Just keep it stored in an airtight container in the fridge for up to 3 days. To reheat, I highly recommend using your air fryer or oven until just warmed through! That way, your tots stay crispy.
How to Freeze
If you plan to freeze this chicken casserole, I suggest baking it in a baking dish instead of a cast iron skillet. You can then place foil over the baking dish once it’s fully cooled to room temp and put it in the freezer.
Notes and Tips
Using butter and oil olive helps the chicken not stick to the skillet. Cutting the chicken before cooking it helps reduce your cooking time. You can use your favorite cheese on top of the tater tots.
How to Make Tater Tot Chicken Casserole Step by Step
Season the chicken: Chop up 2 lbs of chicken breasts into bite-sized pieces. Season with salt and pepper to taste. Cook the chicken: Heat a 12-inch cast iron skillet over medium-high heat. Add in 1 tbsp olive oil and 1 tbsp butter. Once melted, add in the chicken and cook until no longer pink, about 7-10 minutes. Make the filling: Add in 21 oz (2 cans) cream of chicken soup, 1/2 cup milk, 12 oz frozen mixed vegetables and 1 cup of the cheese. Mix well and cook until warmed through. Assemble and bake: Remove from the heat, top with 32 oz frozen tater tots and remaining cheese, then bake at 400℉ for 25-30 minutes until the tots are golden.
