Easy Shrimp Fajitas Recipe

This shrimp fajitas recipe is so flavorful! It’s also fast, easy to make, and healthy. It’s the perfect meal to serve on busy weeknights, Cinco de Mayo, or Taco Tuesday. What toppings can I add to fajitas?

I’m topping these shrimp fajitas with lettuce, red onions, cherry tomatoes, sweet corn, guacamole, and a bit of lime juice. Simple but absolutely delicious! Here are some other topping ideas:

Use spinach instead of lettuce. Add some colorful strips of bell pepper. Top it off with your favorite salsa or pico de gallo. Drizzle it with a creamy chipotle sauce. Add a dollop of sour cream. Add a splash of taco sauce. Use jalapeno slices for more heat. Add some of this tomatillo avocado salsa.

How do you know when the shrimp is cooked?

Shrimp cooks fast and only needs a few minutes in the skillet. It’s done when it starts to turn pink. It will only need about 3 minutes, so stay nearby while cooking.

What should I serve with shrimp fajitas?

These fajitas make a great little meal served along with a salad or simple side dish. Try this cilantro lime rice, confetti corn salad, or this Mexican grilled corn. Whether serving these for dinner or as an appetizer, don’t forget the cocktails! I recommend a passionfruit margarita or try these strawberry palomas.

Can I make these ahead of time?

The great thing about a quick recipe like this, is that you don’t need to make it ahead of time. However, you CAN do some prep (cut veggies, grill up the sweet corn, etc.) or store cooked shrimp in the fridge (up to 3 days). There really isn’t much cooking with these shrimp fajitas though, so you won’t need to do much to get these ready in a rush. These easy shrimp fajitas are absolutely delicious! Serve them for dinner on weeknights, on Cinco de Mayo, or as a fun appetizer with cocktails.
