A handheld electric mixer is ideal for blending the ice cream and Cool Whip. But you can use a stand mixer, or even mix by hand if needed. Freeze for at least 2 hours to let it set. To get clean slices, run your knife under hot water for a few seconds, and wipe to dry between slices.
How to Make Mint Chocolate Chip Ice Cream Pie Step by Step
Blend the Ice Cream: Take 1 quart of mint chocolate chip ice cream out of the freezer 15 minutes ahead of time, so that the ice cream is easier to work with. Use a hand mixer to blend 4 ounces of Cool Whip and the softened ice cream together until uniform. Fill the Pie: Spread the mixture into a pre-made chocolate cookie pie crust. Smooth with a spatula or the plastic lid from the crust. Top the Pie: Drizzle the pie with optional toppings like ¼ cup of hot fudge or caramel sauce and sprinkle with an optional ¼ cup of chopped nuts. Chill and Serve: Cover with the crust lid and freeze for at least 2 hours. Cut and serve!
