How to Make Mandarin Chicken Step by Step
Cook the Chicken: Heat the 1 tablespoon of vegetable oil in a wok or a large skillet set over medium-high heat, then add 1½ pounds of boneless, skinless chicken breasts cut into bite-sized chunks. Cook for 2-3 minutes on each side until the chicken is browned and mostly cooked. Make the Sauce: Meanwhile, whisk together ⅓ cup of orange juice, ¼ cup of low-sodium soy sauce, 2 tablespoons of brown sugar, 2 tablespoons of water, 1½ tablespoons of cornstarch, 2 cloves of minced garlic, ½ teaspoon of freshly grated ginger, and ¼ teaspoon of ground black pepper in a bowl until well combined. Simmer and Serve: Pour the sauce over the chicken and stir to coat. Allow the contents of the skillet to come to a low boil, then reduce the heat to low and let it simmer for 5-8 minutes until the sauce has thickened and the chicken is cooked through. Serve hot with rice and broccoli; garnish with green onions and sesame seeds, if desired.
