Fiesta lime chicken is my favorite thing to order at Applebee’s, but it’s even better when I make it at home! My version has less than half of the calories of the real deal and it still tastes just as amazing! I swapped in lite dressing and thinly-sliced cheese, and I didn’t notice a difference in flavor at all.
How to Store and Reheat
Once cooled to room temperature, you can store any leftover fiesta lime chicken you have in an airtight container in the fridge for up to 3 days or in the freezer for up to 3 months. Let thaw overnight in the refrigerator before reheating in the air fryer or oven until warmed all the way through.
Notes and Tips
Leave the chicken to marinate overnight for the most flavor. If unsure if the chicken is cooked, use a meat thermometer and check it reaches 165°F.
How To Make Fiesta Lime Chicken Step by Step
Marinate the Chicken: Mix together ½ cup of tequila, ¾ cup of lime juice, ½ cup of orange juice, 2 minced cloves of garlic, 1 tablespoon of fiesta lime seasoning blend, 1 teaspoon of black pepper, and ½ cup of fresh cilantro. Place 4 chicken breasts into two different ziplock bags, pour the marinade over the chicken, and marinate for 6-8 hours in the fridge. Grill the Chicken: Remove the marinated chicken from the bags. Grill over medium-high heat for 8-10 minutes per side or until cooked through. Top the Chicken: Brush the chicken with ½ cup of lite ranch, then top each one with 1 slice of ultra-thin Colby jack cheese. Let it Melt: Allow the cheese to melt before removing the chicken from the grill.
