Whenever I get the itch to order delivery, I check my fridge first to see if I have the ingredients for this chicken lo mein recipe. I almost always do, so it saves me time and money to make this dish at home instead. Plus, it actually tastes better than takeout, and feels much fresher!
What’s in this Chicken Lo Mein Recipe?
The simple chicken lo mein sauce is what really sends this mix of chicken, noodles, and veggies over the top!
Chicken: Boneless, skinless chicken breasts work best here, or throw in some leftover or rotisserie chicken. Lo Mein Noodles: You can find Chinese egg noodles in the Asian section of any major grocery store. Soy Sauce: You can swap this with tamari or coconut aminos if preferred. Oyster Sauce: In a pinch, you can use fish sauce or hoisin sauce in place of oyster sauce. Sesame Oil: Toasted and regular sesame oil both work well. Onion: White or yellow onions will both work. Garlic: Fresh garlic will yield better flavor than pre-minced. Veggies: I use a mix of snow peas, carrots, mushrooms, and bell peppers for this lo mein chicken. Feel free to swap in different veggies if needed. Green Onions: These are the best final touch.
How to Store and Reheat
Store homemade chicken lo mein in an airtight container in the refrigerator for up to 4 days. Reheat in a skillet on the stovetop, stirring until fully heated through; or quickly warm it up in the microwave.
How to Freeze
Once cooled to room temperature, transfer the lo mein to an airtight container and keep it stored in the freezer for up to 3 months. Thaw in the fridge before reheating.
Notes and Tips
Be sure not to overcook the lo mein noodles, or they’ll become soggy and mushy!
How to Make Chicken Lo Mein Step by Step
Make the Lo Mein Sauce: In a small dish, whisk together 3 tablespoons of soy sauce, 3 tablespoons of oyster sauce, and 1 teaspoon of sesame oil, then set it aside. Cook the Noodles: Cook 8 ounces of lo mein noodles according to package directions. Cook the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Then add 1 pound of boneless, skinless chicken breast (cut into strips), and season to taste with salt and pepper. Cook it for 5-7 minutes until browned on all sides and cooked through. Then transfer the chicken to a clean plate. Sauté the Onions: Add another tablespoon of olive oil to the pan, then cook ¼ cup of chopped onion for a couple of minutes, until softened. Cook the Veggies: Stir in 1 cup of snow peas, 1 cup of shredded carrots, 1 red bell pepper cut into strips, and 8 ounces of sliced mushrooms; and sauté for 3-4 minutes until they begin to soften. Then add in 2 cloves of minced garlic and cook for another minute. Add All Ingredients: To the pan of veggies, add the cooked cooked noodles, chicken, and lo mein sauce. Give the mixture a good stir to fully combine the ingredients, and cook for a minute or two until the sauce thickens to your liking. Serve: Serve bowls of lo mein chicken sprinkled with sliced green onions. Add some chicken egg rolls on the side if you like!
