What’s in sheet pan apple chicken?
Minimal prep work and simple ingredients make this sheet pan dinner one of our favorites! Check out a few ingredient notes to keep in mind:
Chicken Breasts: You can use chicken thighs instead if preferred. Note that your cook time may change. Apple Juice: Any brand will work well, so just choose your favorite. Chicken Stock: I love using Instant Pot chicken stock whenever I have the chance.
Which apples are good for cooking?
Honeycrisp apples are great because they are subtly sweet and hold their firmness when baked. Jonagolds and Granny Smith are great for baking as well, especially if you want a slightly more tart flavor (which is also divine with the chicken!).
How to Store and Reheat
Keep any leftovers you have in an airtight container in the fridge for up to 3 days. I recommend reheating the chicken and apples back in the oven to maintain the same consistency that it first had. The microwave also works, just reheat in 30 second intervals until warmed all the way through.
Notes from the Test Kitchen
If you don’t have white wine vinegar, you can substitute with apple cider vinegar. Go for a rimmed baking sheet, to make sure all the juices and sauce stay put! If using salted butter, I recommend using a little less salt on the chicken.

How to Make Apple Chicken Step by Step
Bake the chicken: Sprinkle 4 chicken breasts with salt and pepper to taste. Place on a baking sheet and bake at 350°F for 30 minutes. Cook the apples and onions: Melt 2 tbsp butter in a skillet. Mix in 2 tbsp brown sugar to combine. Add 1 large cut and cored apples and 2 small quartered onions to the sugar mixture, toss to coat and cook for about 2 minutes. Remove from heat. Make the liquid mixture: Whisk together 1/2 cup apple juice, 1/4 cup chicken broth, 1 tbsp vinegar and 1 tsp dry mustard. Bake again: Add the apples and onions to the sheet pan with the chicken. Pour the apple juice mixture all over the sheet pan. Sprinkle thyme on top. Bake for 30 minutes.
